Homemade Smashed Potatoes

Ingredients:

• Small to medium-sized potatoes (Yukon Gold or red potatoes work well)
• Olive oil
• Salt and pepper
• Optional toppings: fresh herbs, grated cheese, crispy bacon, sour cream, or your favorite dipping sauce

Instructions:

1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.


2. Wash the potatoes thoroughly and place them in a large pot. Cover the potatoes with water and add a generous pinch of salt.


3. Bring the water to a boil over medium-high heat, then reduce the heat to medium-low and simmer the potatoes for about 15-20 minutes, or until they are fork-tender.


4. Once the potatoes are cooked, carefully drain them and let them cool slightly.


5. Place each potato on the prepared baking sheet and, using the bottom of a glass or a potato masher, gently press down on each potato until it is flattened but still intact.


6. Drizzle olive oil over the smashed potatoes and season generously with salt and pepper.


7. Transfer the baking sheet to the preheated oven and bake the potatoes for 25-30 minutes, or until they are golden brown and crispy around the edges.


8. Once the potatoes are crispy and golden, remove them from the oven and let them cool for a few minutes before serving.


9. Garnish the smashed potatoes with your favorite toppings, such as fresh herbs, grated cheese, crispy bacon, or a dollop of sour cream.


10. Serve the smashed potatoes hot and enjoy their irresistible crispy goodness!
